      Why do some people enjoy the taste of cheeses while others find it sour and aged? Why do some seek out spicy and tangy meals on a restaurant’s menu while others stick with the basic and familiar dishes? New research is uncovering microbiological and genetic sources of taste preferences, which can influence not just eating habits but also our health.

        When we sit down to devour our favorite meal, we take for granted that we will be able to taste and savor the different flavors in the food. Our sense of taste is so essential to our daily lives that we hardly think about it. But taste, as scientists are discovering, is anything but ordinary. It’s a highly complex neurological process influenced by many factors, including genes, age, and experiences that we've had with food 
            How sensitive we are to sweetness, bitterness, saltiness or any other taste depends on our genetic makeup. For example, variants of one gene, TAS2R38, help show how strongly an individual will be able to detect something bitter, and may explain why some people have a mighty dislike of broccoli and other vegetables. Research also has shown that some individuals, dubbed “supertasters,” inherit more taste buds and receptor cells than other people. I find everyone actually is at one point depending on the food they are eating. Tastes seem more intense to them and they tend to avoid powerfully flavored foods, including sugary desserts. They typically sometimes use more salt than other people, possibly to block the bitter taste of certain foods.  
Taste begins in the mouth, where each of us has between 5,000 and 10,000 taste buds crawling around. Each taste bud contains 50 to 100 taste receptor cells — brain cells called neurons that transmit taste information. When we eat a blueberry, for example, saliva dissolves the fruit’s chemicals; they then enter into the central pores of the taste buds and bind to the taste cells. The cells quickly send “sweet” or “sour” taste messages from these chemicals through nerve fibers to the brain.

International Cuisine in the World
        In my experience of traveling abroad I have found that the culinary arts of the world have different extremes. The cuisine definitely is taken to all different international levels ranging from spicy Asian foods in the western hemisphere, to sweet and salty fast-foods of the eastern hemisphere.
      In the Americas, (granted South America can definitely be on the edge) of that with its exotic tropical forest foods. In the Amazon the twisting flavors of sugar cane are being mixed with a wide variety of foods (literally everything). In some parts of Brazil, as opposed to Asian cultures having rice with every meal, they have. Rice and beans making Feijoda. This is a special dish that is accustomed in Brazilian culture. Americans eat common foods that are quick and easy to make or buy. Affordable things like pizza, pastas and , cheeseburgers and fries are examples. Serving these foods are places like;               
Europe-Pizza and pasta-being Italian cultures and styles that brought foods and plants to America like basil, Tomatoes’, Oregano, Pastas and much more gave us places such as Pizza Hut and Ranch, Papa Murphy’s, Godfathers, Olive Garden, Noodles and Company more That have developed over time.
South America-Mexican Cuisine-being Spanish in cultures and traditions being Taco Johns and Bell, Mi Mexico and much more. There are also Columbian and Brazilian foods from the Amazon like Guarana (a special Brazilian pop) and more.

Asian foods- From Sushi to sticky rice we have Panda Express, China Buffet, Chinatown and millions more that have also had a large impact to sharing their culture in America Foods.

Do Colors Effect the Way we Look at Different Foods???
      The traditional saying of "we eat with our eyes" means associating of different flavors to certain colors. This is impacted by the accuracy of plate presentation. Although there are many, many more reason and in-depth psychological aspects even to this topic for today, we'll just go over the basics.
   
How colors and sense affect our foods and how the brain reacts and functions when seeing food and the different triggers we have. This ties in with the different emotions we have as well as shown in the color wheel guide I have here. 



As shown here on our emotion wheel guide, we have a wide range of feeling and emotions to color. We use this chart everyday without even realizing it! In reality, there are different way the culinary world manipulates and control the effects of food through different colors.
For a long time people have had a predisposed perception of colors that affect their senses. This is true with many other things besides foods as well. Furniture, clothing and more have been big products of advertisement that can be brand-named to having certain colors like McDonald's and it's golden arches or Target with the bright red Target symbol. They typically are remembered as that product of name but sometime the product may be mistaken or have a different situation. 
For example someone might say grab me a Kleenex when really all they need is a tissue but some products have become so branded that people know them as their brand and not necessarily what the product is.
Sometime it can be this way with different foods as well especially fast foods. You may want that certain taco from just Taco Johns or Taco Bells. Pizza, can also be wanted from just pizza Hut or Pizza Ranch to some people as well too.
How we see our food
Large food corporations, factories and companies all add color to there labeling and food products to draw attention typically more in their advertisements then the actual food but it still is a trigger to our minds "Oh lets eat there or lets try that." People grown then developing a certain taste to certain foods depending on the cultures and foods they grew up with.
They way you design and display meals can really effect the way your dish looks and how eye-appealing it may be from your garnishes to plate presentation they can all add a new twist of colors that can make your meal look desirable . In the end hopefully we can all look beyond the colors though and taste what's within.

Do colors effect the way we look at food???
   I would say yes, according to many studies shown we do tend to really on our sight before our taste but as far as the 5 sense go and food realtion we definatly go for the smell:)

   Hello, I am very grateful that you have picked up my magazine to read, I would just like to briefly give you a background about my life. I grew up in the small town of Barrett, Minnesota with one older brother who is now an engineer for ConAgra, and my parents. My father is a agricultural professor and my mother sells health insurance. I attended West Central Area High school and then pursed a degree in Communication Art & Design and Graphic Arts at Alexandria Technical. I plan on also continuing my education by getting my food stylist degree at Le Cordon Bleu and opening my own restaurant and cooking show. I will be going into Culinary Arts in the future and continuing on my journey to the fullest.
